Everyone has their own morning routine. During the week mine consists of running around the house trying to get two kids dressed, fed and out the door without being late. By the time I finish my coffee the Everything Bagel Make Ahead Breakfast Casserole is ready to come out of the oven and the kids are downstairs and ready to eat. This easy breakfast casserole has everything you love about breakfast, bacon, eggs, bagels, and lots and lots of cheese. Plus you make it ahead of time which is really the only way to do breakfast. Flipping pancakes is a weekend thing. During the week I need to focus on coffee and getting the kids ready, LOL.

You can make this Everything Bagel Breakfast Casserole the night before. You chop up the everything bagels, and layer them with bacon, cream cheese, and Gruyere cheese. Then you pour a mixture of eggs and cream over the casserole and cover it tightly before putting it in the refrigerator. In the morning you pull it out, pop it in the oven, enjoy your first cup of Dunkin’ Donuts Hazelnut K-Cups Coffee and then breakfast is served…along with your second cup of coffee if you’re lucky!

EVERYTHING BAGEL MAKE AHEAD BREAKFAST CASSEROLE

This simple make ahead breakfast casserole brings together everything you love about breakfast, everything bagels, bacon, cheese, and eggs.

INGREDIENTS

  • 5 Everything bagelscut into 1-inch cubes
  • 8 oz. Baconcooked and diced
  • 2 c. Gruyere Cheeseshredded
  • 8 oz. Cream cheesecut into 1-inch cubes
  • 8 large eggs
  • 2 c. Heavy Cream
  • ½ tsp Salt
  • 1/4 tsp Pepper
  • Chives for garnish

INSTRUCTIONS

  • Grease a 13x9 inch casserole dish.
  • Add ½ of the everything bagel cubes to the casserole dish. Sprinkle with half of the bacon. Then half of the Gruyere, and ½ of the cream cheese.
  • Repeat with another layer of everything bagel, bacon, Gruyere, and cream cheese.
  • In a bowl combine eggs, heavy cream, salt, and pepper. Whisk until thoroughly combined.
  • Pour the egg mixture over the bagels making sure to cover all of them.
  • Tightly over the casserole dish and place in refrigerator for 4 hours or overnight.
  • Preheat oven to 350 degrees F.
  • When ready to bake cover the casserole with aluminum foil and place in the oven to bake for 40 minutes. Then remove foil and continue to bake for 15 minutes.
  • Let cool for 10 minutes before serving. Garnish with chives and enjoy!
